Some say they are local and the company that oversees their operation is in another country. “Local” is sometimes only good until a dollar can be saved at Wal-Mart.

Made “fresh” daily does not necessarily mean “good”. “Whole wheat” is not! Stone ground, or hammer-milled, is.

Scratch baking means mixing all the ingredients on site. Grocery stores do not do this. Scratch baking does not mean good or great products. One has to combine a number of things to develop wonderful goods.

Starting from scratch with fine, healthy ingredients is a good start. Mixing them all together with a love and passion for excellence is the key.
